tortilla soup weather

if you follow baseball and maybe even if you don't, you know that philadelphia has been been blanketed by a non-stop, bone-chilling rain going on two days now. which is good if you're a rays fan as it buys the team a little time to possibly get their shit together before the phillies take the series, but which is bad if you're a phillies fan and your team was leading the potentially-series-winning game last night thanks to some godawful officiating and a very lackluster tampa bay only to have the moment snatched from you by god himself, but which is good if your moods are ruled by hormones and the weather...like me. soup weather is upon us, and we all enjoyed tortilla tonight. if the weather's nice and chilly wherever you're at or if you'd like to crank up the a/c and pretend, here is my very lazy gal's tortilla soup recipe -
  • one 9 oz. package of bear creek tortilla soup mix
  • 2 cups of chopped or shredded chicken
  • half cup of corn or frozen green peas
  • one cup of pinto beans
  • one cup of rice (cooked in advance)
  • one lime cut into 4-8 wedges
  • grated sharp cheddar cheese
  • tortilla chips
cook soup as directed by the package, but double the recommended amount of water. toss in chicken, corn/peas, pinto beans, and rice. cook until everything is well heated (bubbly). spoon the soup into bowls, top with cheese, and serve with lime wedges (to squeeze into the soup) and tortilla chips (to the scoop up the soup).
