tortilla soup weather
- one 9 oz. package of bear creek tortilla soup mix
- 2 cups of chopped or shredded chicken
- half cup of corn or frozen green peas
- one cup of pinto beans
- one cup of rice (cooked in advance)
- one lime cut into 4-8 wedges
- grated sharp cheddar cheese
- tortilla chips
cook soup as directed by the package, but double the recommended amount of water. toss in chicken, corn/peas, pinto beans, and rice. cook until everything is well heated (bubbly). spoon the soup into bowls, top with cheese, and serve with lime wedges (to squeeze into the soup) and tortilla chips (to the scoop up the soup).
